Multi-versatile men's rugby player that primarily plays the positions of hooker, lock, five-eighth, and fullback. He originally began his professional rugby career with the Sydney Roosters of The Australian National Rugby League. After three seasons with the Newcastle Knights, he rejoined the Sydney Roosters during the 2022-23 club season.
Prior to his professional rugby career, he was a student at the Knox Grammar School. As a teenager, he played with The Terrigal Sharks and Kincumber Colts.
He converted a career-high 28 points during his 2019 season with the Newcastle Knights. In 2023, Watson was ruled out for the first months of the NRL season due to suffering a patellar tendon injury during Roosters training.
